Creamy Lemon Garlic Chicken with Spinach Penne
Luscious Lemon Garlic Chicken with Spinach Penne
Ingredients:

12 oz penne pasta
2 tablespoons olive oil
1 lb boneless, skinless chicken breast, cut into strips
4 garlic cloves, minced
1 cup chicken broth (no wine, no alcohol)
1 cup heavy cream
Zest and juice of 1 lemon
2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Optional garnish: fresh parsley and lemon wedges
Directions:

Bring a large pot of salted water to a boil. Cook penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken strips, season with salt and pepper, and cook for 5-7 minutes until golden and fully cooked. Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in chicken broth, scraping the bottom of the skillet to deglaze. Stir in heavy cream, lemon zest, and juice. Bring to a gentle simmer.
Add the chopped spinach to the sauce and cook for 2-3 minutes until wilted.
Stir in Parmesan cheese, allowing it to melt into the sauce. Adjust seasoning with additional salt and pepper if needed.
Return the cooked chicken and pasta to the skillet. Toss everything together until well coated in the creamy lemon garlic sauce.
Serve warm, garnished with fresh parsley and lemon wedges if desired.
