Chicken Francese 🍋🍗
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1/2 cup all-purpose flour
2 eggs, beaten
1/4 cup grated Parmesan cheese
1/4 cup olive oil
1/4 cup unsalted butter
1 cup chicken broth
1/2 cup lemon juice (about 2 lemons)
1/4 cup white grape juice (non-alcoholic substitute)
1/4 cup fresh parsley, chopped
Instructions:
Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off the excess.
Dip the floured chicken in beaten eggs mixed with grated Parmesan cheese.
Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts until golden brown, about 3-4 minutes per side. Transfer to a plate and set aside.
In the same skillet, melt unsalted butter. Add chicken broth, lemon juice, and white grape juice, bringing the mixture to a simmer.
Return the chicken breasts to the skillet, cooking for an additional 5-7 minutes, or until the sauce thickens and the chicken is cooked through.
Garnish with chopped fresh parsley and serve hot.
Notes:
Serve over pasta or with a side of steamed vegetables for a complete meal.
Adjust the lemon juice to taste if you prefer a milder or stronger lemon flavor.
