French Onion Chicken Bake

Ingredients:

4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
1 cup beef broth
1 teaspoon Worcestershire sauce
1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded Gruyère or Swiss cheese
½ cup shredded mozzarella cheese
1 tablespoon unsalted butter
Fresh parsley for garnish (optional)
Instructions:

Preheat & Prepare: Preheat oven to 375°F (190°C). Grease a baking dish and set aside.
Caramelize the Onions: Heat olive oil and butter in a skillet over medium heat. Add sliced onions and cook, stirring frequently, until golden brown (about 20 minutes). Add garlic, Worcestershire sauce, and thyme, cooking for another minute. Pour in the beef broth and simmer until reduced.
Sear the Chicken: Season chicken breasts with salt and pepper. In a separate skillet, sear them over medium-high heat until golden brown on both sides (about 3 minutes per side).
Assemble & Bake: Place chicken breasts in the prepared baking dish. Top each with caramelized onions and pour remaining sauce over them. Sprinkle both cheeses on top.
Bake to Perfection: Bake uncovered for 20–25 minutes, or until chicken is cooked through (internal temperature of 165°F/75°C).
Garnish & Serve: Let rest for a few minutes before serving. Garnish with fresh parsley and enjoy!
