CHEESY POTATO PUFFS 2 cups mashed potatoes, cooled 1 1/2 cups sharp cheddar cheese, shredded or any...

CHEESY POTATO PUFFS
2 cups mashed potatoes, cooled
1 1/2 cups sharp cheddar cheese, shredded or any cheese that you like
2 large eggs, beaten
1/4 cup cream
1/4 cup sour cream
2 green onions, chopped
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
Preheat your oven to 400°F
Lightly grease a muffin tins, custard cups, or ramekins
In a large bowl, combine all the ingredients, mix until smooth and creamy.
Use an ice cream scoop to place the potato mixture into the prepared muffin tins, filling each cup about three-quarters full.
Bake for 20-25 minutes, until the tops are golden and the puffs are set. Sprinkle with fresh, chopped herbs. Serve Warm, with gravy if desired. Makes dozen
You can easily double or triple this recipe for a crowd.
