🍰 White Chocolate Raspberry Poke Cake
A moist vanilla cake soaked with white chocolate pudding and raspberry sauce, topped with fluffy whipped topping and fresh berries. It’s rich, creamy, fruity — and ridiculously easy.

🔸 Ingredients:
For the Cake:
• 1 box white or vanilla cake mix (plus ingredients it calls for: eggs, oil, water)—or use homemade vanilla cake (see optional recipe below)
For the Filling:
• 1 box (3.3 oz / 90g) white chocolate instant pudding mix
• 2 cups cold milk
• ¾ cup raspberry preserves or seedless raspberry jam (warmed slightly)
• Optional: 1–2 tbsp Chambord (raspberry liqueur)
For the Topping:
• 2 cups whipped topping (like Cool Whip) or homemade whipped cream
• ½ cup white chocolate shavings or curls
• Fresh raspberries (1 cup or more)

🔸 Instructions:
1. Bake the Cake:
1 Prepare and bake the cake in a 9x13-inch pan according to box instructions.
2 Let cool for 15 minutes.
2. Poke & Fill:
1 Using the handle of a wooden spoon or a thick straw, poke holes all over the cake — spaced about 1 inch apart.
2 In a bowl, whisk pudding mix with cold milk until just thickened (about 2 minutes).
3 Pour pudding over the cake, gently pushing it into the holes. Smooth excess over the top.
3. Add Raspberry Swirl:
1 Warm raspberry preserves slightly so they’re pourable (microwave 15–20 sec).
2 Spoon or drizzle over the cake and gently swirl with a knife.
◦ For extra flavor, stir in Chambord before drizzling.
4. Chill:
• Cover and refrigerate for at least 2–4 hours, or overnight. This helps everything soak in and set.
5. Top & Decorate:
1 Spread whipped topping evenly over the chilled cake.
2 Garnish with white chocolate shavings and fresh raspberries.
3 Optional: drizzle with extra raspberry sauce or melted white chocolate.

📝 Optional: Homemade Vanilla Cake Base
Instead of cake mix, use:
• 1 ¾ cups flour
• 1 ½ tsp baking powder
• ¼ tsp salt
• ½ cup butter (softened)
• 1 cup sugar
• 3 eggs
• 2 tsp vanilla
• ½ cup milk
• ¼ cup sour cream
Bake at 350°F (175°C) for 30–35 mins in a 9x13 pan.

🔸 Tips:
• Use a piping bag or squeeze bottle to control the pudding and jam as you fill the holes.
• White chocolate chips or mini pearls can be used instead of shavings.
• Make it extra decadent by layering fresh whipped cream cheese frosting on top instead of whipped topping.
