Apple Crumble Cupcakes
Ingredients:
For the cupcakes:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup milk
- 1 1/2 cups peeled and diced apples (preferably peeled and cored)
For the apple filling:
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
For the crumble topping:
- 1/2 cup all-purpose flour
- 1/4 cup rolled oats
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
For decoration:
- Buttercream frosting or whipped cream
- Additional apple pieces or crumble topping for garnish
Instructions:
1. Prepare the apple filling:
- Mix the diced apples with lemon juice, brown sugar, and cinnamon. Set aside.
2. Make the crumble topping:
- In a bowl, combine flour, oats, brown sugar, and cinnamon.
- Cut in the cold butter until the mixture resembles coarse crumbs. Set aside.
3. Preheat oven:
- To 350°F (175°C). Line a cupcake pan with paper liners.
4. Make the cupcake batter:
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat butter and sugar until fluffy.
- Add eggs one at a time, then vanilla.
- Mix in sour cream and milk alternately with dry ingredients.
- Fold in diced apples.
5. Fill the cupcake liners:
- Spoon about 2/3 full with batter.
- Top with a spoonful of the prepared apple filling.
- Cover with remaining batter.
6. Add crumble topping:
- Sprinkle evenly over each cupcake.
7. Bake:
- For 20-25 minutes or until a toothpick inserted into the center comes out clean.
8. Cool and decorate:
- Allow cupcakes to cool before frosting.
- Decorate with buttercream frosting or whipped cream.
- Garnish with extra apple pieces or crumble if desired.
