Garlic Sausage Alfredo Rigatoni

Ingredients:

1 pound rigatoni pasta
1 pound Italian sausage, removed from casings
1 teaspoon olive oil
4 cloves garlic, minced
1/2 cup butter
1 pint heavy cream
1 cup grated Parmesan cheese
1/2 cup grated Romano cheese
1/2 cup shredded mozzarella cheese
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/4 cup chopped fresh parsley, for garnish

Directions:

1. Cook rigatoni according to package directions until al dente. Drain and set aside.
2. Heat olive oil in a large skillet over medium-high heat. Add Italian sausage, breaking it apart with a spoon as it cooks. Cook until browned with crispy golden edges, then drain off any excess grease.
3. Add garlic to the skillet and cook for 1 minute until fragrant. Reduce heat to medium-low, add butter, and stir until melted.
4. Pour in heavy cream and bring to a gentle simmer, stirring occasionally. Add Parmesan, Romano, and mozzarella cheeses. Stir until the cheese melts fully and the sauce is smooth, creamy, and slightly golden.
5. Season with smoked paprika, salt, black pepper, and red pepper flakes if using.
6. Add the cooked rigatoni to the skillet and toss until every piece is coated in the cheesy sauce.
7. Serve hot, sprinkled with fresh parsley for color.
