Pink Coconut Snowball Bars
Ingredients:
- 2 cups shredded coconut
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour
- Pink food coloring (a few drops)
- 1/2 cup white chocolate chips (optional)
Directions:
1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
3. Add the vanilla extract and salt, mixing well.
4. Gradually add the flour and shredded coconut, stirring until combined.
5. Add a few drops of pink food coloring and mix until the color is evenly distributed.
6. Fold in the white chocolate chips if using.
7. Press the mixture firmly and evenly into the prepared baking pan.
8. Bake for 20-25 minutes, or until the edges are lightly golden.
9. Remove from oven and allow to cool completely before cutting into bars.
