Lasagna Soup
Introduction
Someone who tried it said: “First time making but won’t be the last. I don’t think I have ever made a soup with more flavor.”
This deesviral recipe captures all the comfort of traditional lasagna — layers of flavor, rich broth, tender noodles, and plenty of cheese — in one hearty pot.
Ingredients
1 lb ground Italian sausage or beef
1 onion, finely diced
4 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon red pepper flakes (optional)
2 tablespoons tomato paste
1 can (28 oz) crushed tomatoes
6 cups chicken or beef broth
8 lasagna noodles, broken into bite-sized pieces
1 cup ricotta cheese
1 cup shredded mozzarella
½ cup grated Parmesan
Olive oil, for sautéing
Salt and black pepper, to taste
Fresh parsley or basil, chopped, for garnish
Preparation Steps
Heat olive oil in a large pot. Brown sausage until fully cooked, then drain excess fat.
Add onion and garlic; sauté until softened.
Stir in basil, oregano, red pepper flakes, and tomato paste. Cook for 1–2 minutes.
Add crushed tomatoes and broth. Bring to a boil, reduce heat, and simmer for 20 minutes.
Stir in broken lasagna noodles and cook until tender, about 10–12 minutes.
In a small bowl, combine ricotta, mozzarella, and Parmesan.
Ladle hot soup into bowls, top with a spoonful of the cheese mixture, and finish with fresh herbs.
