Garlic Butter Steak Tips with Buttered Egg Noodles in Cheddar Sauce
Ingredients:
1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
1 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1 tsp Cajun seasoning
1 tsp smoked paprika
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
12 oz wide egg noodles
2 tbsp unsalted butter
1 ½ cups heavy cream
1 cup whole milk
2 cups sharp cheddar cheese, shredded
½ cup Parmesan cheese, freshly grated
½ tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional, for heat)
Salt and black pepper, to taste
Directions:
1. Bring a large pot of salted water to a boil. Cook the egg noodles until just tender. Drain and toss with 2 tbsp butter to coat. Set aside.
2. In a saucepan over medium heat, melt 2 tbsp butter. Add minced garlic and cook 30 seconds until fragrant. Stir in the heavy cream and milk, then reduce heat to low. Slowly whisk in cheddar and Parmesan until melted and creamy. Season with Italian seasoning, salt, pepper, and red pepper flakes if using. Stir the buttered noodles into the sauce until fully coated and cheesy.
3. Pat the steak cubes dry with paper towels. Season with Cajun seasoning, smoked paprika, salt, and pepper.
4. Heat olive oil in a cast-iron skillet over medium-high heat. Sear the steak tips in a single layer, 2–3 minutes per side, until browned and cooked to your preference. Lower the heat, add 3 tbsp butter and garlic, then baste the steak tips with the melted garlic butter for 1–2 minutes. Spoon butter over the meat as it cooks for maximum flavor.
5. Serve the cheesy buttered egg noodles on one side of the plate and the garlic butter steak tips on the other. Drizzle with extra garlic butter and garnish with fresh parsley.
