Kusksu is one of Malta's traditional most loved comfort foods ❤

A delicious heartwarming soup made with broad beans, veggies, pearl pasta, eggs and the popular Maltese cheeselets 😋

RECIPE - Serves 4
Ingredients 🛒
250g/8.8oz Peeled Broad Beans, fresh or frozen
1 Onion, diced
2 Potatoes, diced
3-4 Carrots sliced not too thin
2 Zucchini sliced and halved
3 Tbsp Tomato paste
1/2 Tsp Mild Curry Powder
1/4 Tsp Mixed Spice
2 Litres Water
2 Chicken Cubes, crumbled
250g/8.8oz Pearl Pasta (Kusksu)
8 Fresh Maltese Cheeselets (Gbejniet Friski), drained
4 Eggs

Method:
In a large soup pot, sauté the onions in 2 tablespoons butter. When they start to soften add the broad beans and stir through for about 1 minute.
Add the crumbled chicken cubes, curry, mixed spice and tomato paste. Stir through then add the vegetables and season with pepper. Add 2 litres of water, stir everything together and simmer covered for about 30 minutes, until carrots and vegetables are nearly cooked. (You don't want to completely cook the vegetables as they will be too soft by the time the soup is ready).
Uncover the pan, crack the eggs one by one into a small glass and slowly drop into the soup not next to each other. Cook for a few minutes, until the eggs have set, then add the maltese cheeselets and cook for about 15 minutes.
Add the pasta and continue cooking until pasta is cooked al dente.
