Crab and Shrimp Stuffed Salmon

Ingredients
1. Four salmon fillets, skin on
2. Eight ounces crab meat, picked clean
3. Four ounces shrimp, chopped small
4. Quarter cup cream cheese, softened
5. Two tablespoons mayonnaise
6. One tablespoon lemon juice
7. One garlic clove, minced
8. Two tablespoons fresh parsley, chopped
9. Salt and pepper to taste
10. Olive oil for cooking

Instructions
1. Preheat oven to 375 degrees F
2. In a bowl stir crab shrimp cream cheese mayonnaise lemon juice garlic parsley salt and pepper until well blended
3. Pat each salmon fillet dry and slice a pocket along the side without cutting through
4. Spoon the seafood mixture into each pocket and gently press to close
5. Heat a drizzle of olive oil in an oven safe skillet over medium heat
6. Place salmon pocket side down and cook two minutes until lightly golden
7. Flip fillets, cook one more minute then transfer skillet to the oven
8. Bake ten to twelve minutes until salmon flakes easily with a fork
9. Remove from oven and let rest two to three minutes before serving

Serve alongside steamed veggies or a fresh green salad and pour yourself a glass of something crisp. Enjoy every bite of this cozy seafood dinner
