APPLE CUSTARD CAKE 🍏🥮☕
This Apple Custard Cake is a delicious variation of the classic apple pie, which stands out for it's moist and creamy consistency, similar to a flan. With a few simple ingredients, you can whip up this delicious dessert in just 30 minutes! 😍

RECIPE - Serves 8
Ingredients 🛒
5 Granny Smith Apples
80g/2.8oz Plain Flour
2 Eggs, room temperature
1 (150g/5.3oz) Tub Vanilla Yoghurt, room temperature
30g/1.05oz Sugar
20g/0.7oz Vegetable Oil
8g Baking Powder
1/2 Tsp Lemon Zest
1/2 Tsp Cinnamon

Topping:
2 Tbsp Apricot Jam
Light Brown Sugar for sprinkling
Icing Sugar/Powdered Sugar for dusting
Chopped Walnuts (optional)
Sliced Apples

Method:
Preheat oven to 180C/350F.
Line the inside of a 22cm springform cake pan with 2 sheets of parchment paper.
Peel, core and thinly slice the apples with a mandolin or by hand.
In a large bowl, add the eggs, lemon zest and yoghurt. Mix with a hand balloon whisk until well combined.
Add the oil, sugar, sift in the flour, baking powder and cinnamon and mix again just until combined.
Fold in the apples (set aside a few for on top), and pour the mixture into prepared pan.
Top with remaing sliced apples, slightly overlapping each other. Start from the outer side working to the center.
Sprinkle light brown sugar on top of apples with a few chopped walnuts if using. Bake in oven for 45 minutes.
Remove from oven. Leave to cool slightly and remove from pan.
Brush the apples and walnuts with apricot jam, (warm the jam slightly in the microwave). Dust with icing sugar before serving.
This custard cake is also delicious served warm with a scoop of vanilla ice-cream!
