🧾 Ingredients (Serves 2)
1 lb lean ground beef
2 medium russet potatoes, cubed
1 tbsp olive oil
1 tbsp chipotle powder (adjust to your spice preference)
1 tsp garlic powder
1 tsp onion powder
½ tsp cumin
Salt and freshly ground black pepper to taste
Optional toppings: shredded cheese, salsa, Greek yogurt or sour cream, avocado, chopped cilantro, lime wedges

Preheat oven to 400°F (200°C) or air fryer to 380°F (190°C).
Toss the cubed potatoes with olive oil, salt, pepper, garlic powder, and onion powder.
Roast in the preheated oven for 20-25 minutes, or air fry for 15-20 minutes, flipping halfway through, until golden brown and tender.
While the potatoes are cooking, brown the ground beef in a skillet over medium-high heat. Drain any excess grease.
Stir in the chipotle powder, cumin, garlic powder, onion powder (if you didn't use it on the potatoes), salt, and pepper to the ground beef. Cook for another 5 minutes, allowing the flavors to meld. Add a splash of water if the mixture seems too dry.
Once the potatoes are cooked, divide them between two bowls.
Top the potatoes with the chipotle seasoned ground beef.
Add your favorite toppings such as shredded cheese, salsa, Greek yogurt or sour cream, sliced avocado, chopped cilantro, and a squeeze of lime.
