🇮🇹 Eggplant Rollatini (Stuffed Eggplant Rolls)
Tender slices of eggplant stuffed with creamy ricotta, smothered in marinara sauce, and baked to perfection!
Ingredients:
• 2 large eggplants, thinly sliced
• 2 cups ricotta cheese
• 1 cup marinara sauce
• 1 cup mozzarella cheese, shredded
• 1/4 cup Parmesan cheese
• 1 egg
• Fresh basil
• Olive oil
• Salt & pepper
Instructions:
1. 🍆 Brush eggplant slices with olive oil, bake until soft.
2. 🥄 Mix ricotta, egg, Parmesan, salt, and pepper.
3. 🌀 Spread ricotta mix onto eggplant slices and roll up.
4. 🍅 Place rolls in a baking dish, cover with marinara and mozzarella.
5. 🔥 Bake at 180°C (350°F) for 25–30 minutes. Top with fresh basil!
