Chicken Souvlaki 🍢
Experience the flavors of Greece with this delicious Chicken Souvlaki recipe. Tender chicken marinated in a blend of olive oil, lemon, garlic, and herbs, grilled to perfection and served with warm pita bread, fresh tomatoes, onions, and creamy tzatziki sauce.
Ingredients
Chicken and Marinade:
2 lbs chicken breasts (about 4 breasts), cut into 1-inch cubes
½ cup canola or olive oil
3 tbsp white wine vinegar
Juice of 2 lemons (adjust to 3 if lemons are not very juicy)
6 garlic cloves, smashed
3 tbsp fresh minced dill weed
3 tbsp fresh minced parsley
2 tsp dried oregano
1-1.5 tsp coarse salt, more or less to taste
½ tsp black pepper
To Serve:
6-8 Greek pita bread, warmed
2 tomatoes, sliced
½ red onion, sliced thin
½ cup tzatziki sauce, more or less to taste
Directions
Marinate the Chicken:
In a bowl, combine olive oil, white wine vinegar, lemon juice, smashed garlic cloves, minced dill weed, minced parsley, dried oregano, salt, and black pepper. Whisk well to blend all ingredients thoroughly.
Place the chicken cubes in a large zip-top bag or glass container suitable for marinating. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the container and refrigerate for at least 2 hours or overnight (up to 12 hours).
Prepare and Grill the Chicken:
Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for about 45 minutes to prevent burning.
Thread the marinated chicken pieces onto skewers, fitting 4-5 pieces per skewer.
Grill the chicken skewers for about 4-5 minutes per side, turning them a quarter of the way to ensure even cooking. The total cooking time will be approximately 16-20 minutes, depending on the thickness of the chicken pieces.
While the chicken is grilling, lightly brush olive oil on both sides of the pita bread and place them on the grill to heat through.
Slice the tomatoes and red onion thinly and arrange them on a serving dish.
Assemble Chicken Souvlaki:
To serve, place a warmed pita bread on each plate. Top with grilled chicken from the skewers, sliced onions, tomatoes, and a generous dollop of tzatziki sauce.
