📋 Ingredients
- 1 box yellow cake mix (or vanilla)
- 1 can (20 oz) crushed pineapple (with juice)
- 3 eggs
- 1/3 cup vegetable oil
- 1/2 tsp vanilla extract
- 1 can (20 oz) pineapple slices
- 1/4 cup brown sugar
- 2 tbsp butter (melted)
- Maraschino cherries (optional but classic)
- 1 cup heavy whipping cream (optional)
- 1/2 cup powdered sugar (optional)
- 1/2 cup crushed pineapple (drained, optional)
📝 Instructions
1. Preheat oven to 350°F (175°C).
2. Grease a 9x13-inch baking pan or line with parchment.
3. If using pineapple slices, lay them in the bottom of the pan with cherries in the center of each.
4. Pour melted butter and brown sugar evenly on top.
5. In a large bowl, combine cake mix, crushed pineapple (with juice), eggs, oil, and vanilla.
6. Beat for 2–3 minutes until smooth and well combined.
7. Pour the batter over the topping (if using slices) or directly into the greased pan.
8. Bake for 30–35 minutes, or until golden and a toothpick comes out clean.
9. If you used pineapple slices and want to flip the cake upside-down, cool for 10 minutes, then invert onto a serving tray.
10. Optional: Beat heavy cream and powdered sugar to stiff peaks.
11. Fold in drained pineapple.
12. Spread on top once the cake is completely cooled.
