Ingredients:
2 cups all-purpose flour
⅓ cup granulated sugar
1 tbsp baking powder
½ tsp salt
Zest of 1 lemon
½ cup cold unsalted butter, cubed
½ cup heavy cream (plus extra for brushing)
1 large egg
1 tsp vanilla extract
1 cup fresh raspberries (or frozen, unthawed)
2 tbsp coarse sugar (optional, for topping)

Instructions:
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together the flour, sugar, baking powder, salt, and lemon zest.
3. Add the cold butter cubes and cut them into the dry mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
4. In another bowl, whisk together the heavy cream, egg, and vanilla extract. Add this wet mixture to the dry ingredients and stir until just combined.
5. Carefully fold in the raspberries, taking care not to crush them.
6. Turn the dough onto a floured surface and gently shape it into a circle about 1 inch thick. Cut it into 8 wedges.
7. Place the wedges on the prepared baking sheet, leaving space between them. Brush the tops with a little cream and, if desired, sprinkle with coarse sugar.
8. Bake for 18–22 minutes, or until the tops are golden and the scones are cooked through.
9. Allow to cool on a wire rack before serving. Optional: drizzle with a simple lemon glaze made from powdered sugar and lemon juice.
