Garlic Herb Shrimp & Sautéed Mushrooms
Ingredients:
1 pound large shrimp, peeled and deveined
1 pound cremini mushrooms, sliced
4 tablespoons butter
4 cloves garlic, minced
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh thyme
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup dry white wine (optional)
2 tablespoons lemon juice
Instructions:
1. Pat the shrimp dry with paper towels. Season with salt and pepper.
2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
3. In the same skillet, add the olive oil and remaining 2 tablespoons of butter. Once melted, add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they are tender and lightly browned.
4. Add the minced garlic to the skillet and cook for 1 minute, or until fragrant. Be careful not to burn the garlic.
5. If using, pour in the white wine and let it simmer for 1-2 minutes, allowing the alcohol to cook off and the sauce to slightly reduce.
6. Stir in the chopped parsley and thyme.
7. Add the cooked shrimp back to the skillet and toss gently to combine with the mushrooms and herb mixture.
8. Cook for another minute to heat through.
9. Stir in the lemon juice.
10. Serve immediately. Enjoy!
