Luscious White Velvet Cake 🌟

Ingredients

For the White Velvet Cake:

2 ½ cups (320g) all-purpose flour

2 ½ teaspoons baking powder

½ teaspoon salt

1 cup (226g) unsalted butter, softened

2 cups (400g) granulated sugar

4 large egg whites, room temperature (save the yolks for another recipe or discard)

1 teaspoon vanilla extract

1 teaspoon almond extract (optional, for extra flavor)

1 cup (240ml) buttermilk, room temperature

½ cup (120ml) whole milk, room temperature

For the Frosting (Optional)
1 cup (226g) unsalted butter, softened

4 cups (480g) powdered sugar

2-4 tablespoons heavy cream or milk

1 teaspoon vanilla extract

A pinch of salt

Instructions

Step 1: Make the White Velvet Cake
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.

Add the egg whites one at a time, beating well after each addition. Stir in the vanilla and almond extract (if using).

Gradually add the dry ingredients, alternating with the buttermilk and whole milk, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before frosting.

Step 2: Make the Frosting
In a large bowl, beat the butter until creamy and smooth.

Gradually add the powdered sugar, 1 cup at a time, mixing on low speed until combined.

Add the vanilla extract and a pinch of salt.

Add heavy cream or milk one tablespoon at a time until the frosting reaches your desired consistency.

Continue to beat on high for 2-3 minutes until fluffy and light.

Step 3: Assemble the Cake
Place one cake layer on a serving platter.

Spread a layer of frosting over the top of the first cake layer.

Place the second cake layer on top and frost the top and sides of the cake.

Optional Garnishes: You can decorate the cake with fresh berries, edible flowers, or even a drizzle of fruit preserves for extra color and flavor.
