Savory Cajun Chicken with Creamy Parmesan Linguine Pasta
Ingredients:
2 boneless, skinless chicken breasts, cut into strips
12 oz linguine pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Begin by preparing the chicken. In a small bowl, combine Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Coat the chicken strips evenly with this spice blend, ensuring each piece is well-seasoned.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken strips and cook for about 6-7 minutes, flipping occasionally, until the chicken is golden brown and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.
While the chicken cooks, bring a large pot of salted water to a boil. Cook the linguine according to the package directions. Once done, drain the pasta, reserving a small amount of pasta water to use later if needed.
In the same skillet used for the chicken, add a little more olive oil if needed, and sauté the garlic over medium heat for 1 minute, stirring constantly, until it becomes fragrant. Pour in the chicken broth, scraping up any flavorful bits from the bottom of the skillet. Add the heavy cream and bring the mixture to a simmer. Let the sauce cook for a couple of minutes until it thickens slightly.
Add the drained linguine to the skillet and toss the pasta in the creamy sauce, ensuring it’s well-coated. Stir in the Parmesan cheese, and continue cooking for an additional 1-2 minutes until the cheese melts and the sauce becomes creamy and velvety.
Return the cooked chicken to the skillet, stirring everything together so the flavors meld. Garnish with fresh parsley and serve immediately for a flavorful, satisfying dish.
