3 Comforting Soup Recipes

1. Broccoli Cheddar Soup
Ingredients:
3 tsp butter
1 onion diced
1/4 cup flour
2 cups heavy cream
2 cups chicken broth
3 cups broccoli sliced (1 crown broccoli)
1 cup carrots julienne
2 cups shredded cheddar cheese
Salt and pepper to taste
Easy steps:
In a large pan or pot, add butter and let it melts. Then, saute diced onion. Saute till tender and translucent. Add the flour and mix till browned for about a minute. Then, ado chicken broth, heavy cream. Let it boils. Then, add broccoli and carrots. Simmer for 1-2 minutes. Then, add the shredded cheddar cheese. Mix well till cheese is melted.
Season with salt and pepper. Serve warm. Enjoy!

2. So Easy Egg Drop Soup 💗

My Favorite Egg Drop Soup - Restaurant Style

This loaded protein soup is so easy that you can make in no time. Better than take out!

Ingredients:
4 cups chicken stock or broth (low sodium)
1/4 cup water plus 4 teaspoons cornstarch (mix well)
2 eggs, beaten in a bowl
1/4 teaspoon black pepper
1 teaspoon sesame oil
1 stalks green onions sliced (about 1/4 cup)
Salt or fish sauce to taste( optional)

Steps:
In a small bowl, mix the eggs and set aside.
In a large pot, add 4 cups chicken broth. Let it boils. Add the cornstarch slurry and mix well till thickens. Slowly pour the egg mixture and mix it using a spatula for about 1 minute. Add sesame oil and black pepper. Season with salt or fish sauce to taste if needed. Garnish with green onions. Serve immediately. Enjoy!

3. Wonton Soup
Comforting Soup you can make at home that your family will surely enjoy!

Ingredients:
7 cups chicken broth
15 -20 pcs of wonton or dumplings of choice
4 cloves garlic minced
1 inch size ginger minced
1 tsp oil to saute
1 bundle of bok choy
1 tosp soy sauce
1 tsp sesame oil
Garnish: 1/2 cup green onions and chili oil
Steps:
In a large pot, add oil and saute the garlic and ginger for about a minute till fragrant. Then add the broth, soy sauce and sesame oil. Let it boils. Once it boils, add frozen wonton and cook for about 6-7 minutes. Then, add bok choy. Simmer for a minute. Garnish with green onions and chili oil, ready to serve. Season with salt and pepper if needed. Enjoy!
Note: if there's no bok choy available, you can use 1 crown broccoli or any vegetable of choice like parsley, kale
