π° Easter M&M Cookie π
Ingredients
1 cup (225g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
Β½ cup (110g) packed light brown sugar
2 large eggs, at room temperature
1 tsp pure vanilla extract
2 Β½ cups (315g) all-purpose flour (spooned and leveled)
1 tsp baking soda
Β½ tsp baking powder
Β½ tsp fine sea salt
1 Β½ cups (250g) Easter-themed M&Ms (plus extra for topping)
Instructions
1. Preheat and Prep
Preheat your oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper or silicone baking mats.
2. Make the Cookie Dough
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using a hand mixer or stand mixer until the mixture is light, fluffy, and creamy (about 2β3 minutes).
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
3. Add the M&Ms
Gently fold in 1 Β½ cups of Easter M&Ms using a spatula, ensuring theyβre evenly distributed throughout the dough.
4. Scoop and Shape
Use a cookie scoop or tablespoon to portion out the dough into 2-tablespoon-sized balls. Place them on the prepared baking sheets, spacing them about 2 inches apart. Press a few extra M&Ms onto the tops of each cookie for a festive look.
5. Bake to Perfection
Bake the cookies for 10β12 minutes, or until the edges are lightly golden but the centers are still soft. The cookies will continue to set as they cool.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
