Easy Corn RELISH Recipe!
Ingredients:
5 cups corn kernels
2 tomatoes diced
1 onion diced
1 red bell pepper seeded and diced
1 green bell pepper seeded and diced
1 1/2 cups apple cider vinegar
1/2 cup water
1 cup sugar
1 1/2 tbsp salt
2 tsp mustard seeds
1 tsp celery seeds
Steps:
You need 4 pints jar- clean and sterilized.
In a large bowl, add corn, diced tomatoes, onion and bell peppers. Mix well. Then, arrange them into the sterilized jar. Leave 1 inch space.
In a saucepan, add vinegar, water, sugar, salt, mustard seeds and celery seeds. Mix well until the sugar and salt dissolves. Let it boil to high heat.
Remove from the stove and pour it into the jar. Let it cool and seal. Ready to eat or store in refrigerator.
Refrigerate until 6 weeks. Enjoy!
