1. Cinnamon Pancakes

1 teaspoon vanilla extract
For the Cinnamon Swirl:
¼ cup unsalted butter, melted
¼ cup brown sugar
1 tablespoon cinnamon
1 tablespoon flour (helps the swirl hold its shape)
For the Cream Cheese Glaze (Optional but Delicious!):
2 oz cream cheese, softened
½ cup powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract
Instructions:
Make the Cinnamon Swirl: In a small bowl, mix melted butter, brown sugar, cinnamon, and flour until smooth. Transfer to a ziplock bag or piping bag and set aside.
Prepare the Pancake Batter: In a large bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk together milk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and gently mix . Let the batter rest for 5-10 minutes to make fluffier pancakes.
Cook the Pancakes & Add Swirls: Heat a non-stick pan or griddle over medium heat and lightly grease with butter. Pour ¼ cup of pancake batter onto the pan. Snip the corner of the cinnamon swirl bag and pipe a spiral onto the pancake batter. Cook until bubbles form on the surface (about 2 minutes), then flip and cook another 1-2 minutes.
Make the Cream Cheese Glaze: Whisk together cream cheese, powdered sugar, milk, and vanilla until smooth.

1 cup fresh or frozen blueberries
