Banana Pudding Pound Cake recipe
Ingredients
For the Pound Cake:
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
3 ripe bananas, mashed
½ cup sour cream
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
For the Vanilla Pudding Drizzle:
1 box (3.4 oz) instant vanilla pudding mix
1 cup cold milk
½ cup sweetened condensed milk
For the Topping:
1 banana, sliced
½ cup crushed vanilla wafers
Instructions
Preheat oven to 325°F (163°C) and grease a Bundt pan.
Make the cake batter: In a large bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla, mashed bananas, and sour cream.
In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix dry ingredients into wet ingredients.
Pour batter into the greased pan and bake for 60–70 minutes or until a toothpick comes out clean. Let it cool before removing from the pan.
Prepare the vanilla pudding drizzle: Whisk together pudding mix, milk, and sweetened condensed milk until smooth. Let it thicken for 5 minutes.
Assemble: Drizzle pudding over the cooled cake, then top with banana slices and crushed vanilla wafers.
