You’ll need:
• 4 cups corn (fresh or frozen)
• 1 onion, chopped
• 2 medium potatoes, peeled & diced
• 3 cups chicken or veggie broth
• 1 cup heavy cream
• 4 slices cooked bacon, crumbled
• 2 garlic cloves, minced
• 1 tsp salt
• ½ tsp black pepper
• ½ tsp smoked paprika
• 2 tbsp butter
• 2 tbsp flour
• Fresh parsley for garnish
Instructions:
1️⃣ Add corn, onion, potatoes, broth, garlic, and spices to your slow cooker. Cook on low for 6-8 hrs.
2️⃣ Make a creamy roux with butter, flour, and heavy cream; stir it into the soup.
3️⃣ Add bacon, cook on high for 30 more mins.
4️⃣ Garnish with parsley and serve!
