Creamy Sun-Dried Tomato Vegan Pasta 🍝
Ingredients:
12 oz pasta (penne, fettuccine, or your choice)
2 tbsp olive oil
1/2 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1/2 small onion, diced
1/2 tsp red pepper flakes (optional)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1 cup unsweetened coconut milk or cashew cream
1/2 cup vegetable broth
1 tbsp nutritional yeast (for cheesy flavor)
2 cups fresh spinach, chopped
1 tbsp fresh basil, chopped (optional)
Directions:
1️⃣ Cook pasta according to package instructions. Drain and set aside.
2️⃣ In a large skillet, heat olive oil over medium heat. Add onion and cook until soft.
3️⃣ Stir in garlic, red pepper flakes, and sun-dried tomatoes. Cook for 1-2 minutes until fragrant.
4️⃣ Add salt, black pepper, and Italian seasoning. Stir well.
5️⃣ Pour in vegetable broth and coconut milk (or cashew cream), then add nutritional yeast. Stir and let simmer for 5 minutes until creamy.
6️⃣ Add spinach and cook until wilted.
7️⃣ Toss in the cooked pasta and mix until well coated.
8️⃣ Garnish with fresh basil if desired and serve warm. Enjoy!
