3 medium sweet potatoes, peeled
6 small Yukon gold potatoes, peeled
1 teaspoon kosher salt
¼ teaspoon ground black pepper
¾ teaspoon garlic powder
1½ teaspoon dried parsley
½ teaspoon dried thyme
½ teaspoon ground sage
½ teaspoon dried rosemary
8 ounces Gruyère or sharp white cheddar, grated (about 2 cups)
½ cup thinly sliced yellow onion, chopped
½ cup whole milk or half-and-half
½ cup low-sodium chicken broth
Instructions:
Prepare the Oven and Potatoes:
Preheat the oven to 375°F (190°C). Peel the sweet potatoes and Yukon gold potatoes. Using a mandolin or vegetable slicer, cut the potatoes into very thin slices.
Mix the Ingredients:
In a large bowl, gently toss the sliced potatoes with kosher salt, black pepper, garlic powder, parsley, thyme, sage, rosemary, grated cheese, and chopped onion until everything is evenly mixed. Be careful not to break the thin potato slices.
Assemble the Dish:
Working with a small handful of potatoes at a time, gently arrange the coated slices in a 10-inch cast-iron skillet or a 2-quart baking dish. Pour the milk and chicken broth over the potatoes. Cover the pan tightly with foil, sealing around the edges.
Bake:
Bake in the preheated oven for 50 minutes. After 50 minutes, remove the foil and continue baking for an additional 15 to 20 minutes, or until the potatoes are tender and the top is golden brown. You can test for doneness by inserting a knife into the potatoes; they should be tender throughout.
