7-Up Pound Cake
Ingredients:
1 cup (2 sticks) unsalted butter, softened
3 cups granulated sugar
5 large eggs
1 cup 7-Up (or any lemon-lime soda)
1 teaspoon vanilla extract
1 teaspoon lemon extract
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (165°C). Grease and flour a 10-inch bundt pan or a tube pan.
Prepare the Batter:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla and lemon extracts.
In a separate bowl, whisk together the flour, salt, and baking powder.
Gradually add the dry ingredients to the butter mixture, alternating with the 7-Up. Begin and end with the dry ingredients, mixing just until combined.
Bake the Cake:
Pour the batter into the prepared bundt or tube pan, smoothing the top with a spatula.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 15 minutes, then turn out onto a wire rack to cool completely.
Serve:
Once completely cooled, dust with powdered sugar or drizzle with a simple glaze if desired.
