St. Patrick's Day Chocolate Covered Mint Patties 😋
Ingredients:
For the Mint Filling:
2 cups powdered sugar
2 tablespoons unsalted butter, softened
2 tablespoons heavy cream
1 teaspoon peppermint extract
½ teaspoon vanilla extract
A few drops of green food coloring
For the Chocolate Coating:
8 oz semi-sweet or dark chocolate, chopped (or chocolate chips)
1 teaspoon coconut oil or shortening (optional, for smooth melting)
Green and white sprinkles (optional, for decoration)
Directions:
1. Make the Mint Filling:
In a bowl, mix powdered sugar, butter, heavy cream, peppermint extract, and vanilla extract.
Stir until a thick dough forms. Add a few drops of green food coloring and mix until evenly colored.
If the mixture is too sticky, add more powdered sugar (1 tablespoon at a time) until manageable.
2. Shape the Patties:
Roll the dough into small balls (about 1-inch in size).
Flatten each ball into a disc and place them on a parchment-lined baking sheet.
Freeze for 30 minutes to firm up.
3. Melt the Chocolate:
In a microwave-safe bowl, melt chocolate with coconut oil in 30-second intervals, stirring between each until smooth.
Let the chocolate cool slightly before dipping.
4. Dip & Decorate:
Using a fork, dip each mint patty into the melted chocolate, letting excess drip off.
Place them back on the parchment-lined sheet.
Sprinkle with green and white sprinkles before the chocolate sets.
5. Chill & Serve:
Refrigerate for 30 minutes until the chocolate is firm.
Enjoy cold or at room temperature
