For the Salmon:

π― Honey - 2 tbsp
π₯ Dijon mustard - 1 tbsp
π₯ Whole grain mustard - 1 tbsp
π§ Garlic powder - 1/2 tsp
πΆοΈ Paprika - 1/2 tsp
π§ Salt & pepper - to taste
π« Olive oil - 1 tbsp
For the Garlic Mashed Potatoes:
π₯ Russet or Yukon gold potatoes - 2 large (peeled and cubed)
π§ Butter - 2 tbsp
π₯ Milk or heavy cream - 1/4 cup
π§ Garlic - 2 cloves (minced or roasted)
π§ Salt & pepper - to taste
For the Green Beans:
π« Fresh green beans - 2 cups (trimmed)
π§ Garlic - 1 clove (minced)
π§ Butter - 1 tbsp
π§ Salt & pepper - to taste
Directions:
Prepare the Salmon: Preheat oven to 375Β°F (190Β°C). In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, garlic powder, paprika, salt, and pepper. Place salmon fillets on a baking sheet lined with parchment paper, brush with the glaze, and drizzle with olive oil. Bake for 15-18 minutes or until cooked through. For a caramelized finish, broil for the last 2 minutes.
Make the Mashed Potatoes: Boil potatoes in salted water until tender, about 12-15 minutes. Drain and mash with butter, milk, garlic, salt, and pepper until creamy. Adjust seasoning to taste.
Cook the Green Beans: In a skillet, melt butter over medium heat. Add green beans and garlic, sautΓ©ing for 5-7 minutes until tender but still crisp. Season with salt and pepper.
Assemble the Plate: Serve the glazed salmon with a generous scoop of garlic mashed potatoes and sautΓ©ed green beans on the side. Drizzle any extra salmon glaze over the fish for added flavor.
Notes & Variations:
Swap green beans for asparagus or roasted broccoli.
