Torta di Polenta al Limone (Italian Lemon Polenta Cake) 🇮🇹🍋Ingredients:
• 200g cornmeal (polenta)
• 150g almond flour
• 150g sugar
• 3 eggs
• 120ml butter, melted
• 1 tsp baking powder
• Zest of 2 lemons
• Juice of 2 lemons
• 1 tsp vanilla extract
• 100g powdered sugar (for glaze)
Instructions:
1. Preheat oven to 180°C (350°F) and grease a cake pan.
2. Beat eggs and sugar until creamy, then add melted butter, lemon zest, juice, and vanilla.
3. Mix in almond flour, polenta, and baking powder.
4. Pour into the pan and bake for 35-40 minutes.
5. Mix lemon juice and powdered sugar into a glaze and pour over the cooled cake.
