Lemon Ginger Salmon with Zucchini Penne
Zesty Lemon-Ginger Salmon over Garlic Zucchini Penne
Ingredients:
2 salmon fillets (approx. 150g each)
2 tablespoons olive oil
1 tablespoon fresh ginger, finely grated
2 garlic cloves, minced
Juice and zest of 1 lemon
Salt and pepper to taste
1/2 teaspoon paprika
250g penne pasta
2 medium zucchinis, julienned or spiralized
1 tablespoon fresh parsley, chopped
Lemon wedges, for serving
Directions:
Cook penne pasta according to package instructions. In the last 2 minutes of cooking, add julienned zucchini to the boiling water. Drain together and set aside.
In a small bowl, combine lemon juice, lemon zest, grated ginger, garlic, olive oil, salt, pepper, and paprika to make the marinade.
Rub the salmon fillets with half of the marinade and let sit for 10–15 minutes.
Heat a nonstick skillet over medium heat. Place salmon skin-side down (if using skin-on) and cook for 4–5 minutes. Flip and cook for another 3–4 minutes, or until cooked through.
Toss the cooked pasta and zucchini with the remaining half of the marinade.
Serve the lemon ginger salmon on top of the zucchini penne, garnished with fresh parsley and lemon wedges.
