Quick Pastina Soup Recipe
Ingredients:
4 cups chicken or vegetable broth
1 cup cherry tomatoes
½ cup pastina (tiny pasta like stelline or acini di pepe)
Fresh parsley or basil (for garnish)
Instructions:
Bring broth to a boil.
Peel tomatoes: score bottoms with an X, soak in hot water for 2 minutes, then peel.
Dice tomatoes and add to boiling broth.
Add pastina and cook according to package directions (about 5–7 minutes).
Garnish with chopped parsley or basil and serve hot.
