Chili Garlic Shrimp with Broccoli Penne
Spicy Garlic Prawns with Tender Broccoli Florets over Al Dente Penne Pasta
Ingredients:
1 pound large shrimp, peeled and deveined
12 ounces penne pasta
3 tablespoons olive oil, divided
5 cloves garlic, minced
1-2 teaspoons red pepper flakes (adjust to taste)
3 cups broccoli florets
1 red bell pepper, thinly sliced
1 tablespoon lemon zest
3 tablespoons fresh lemon juice
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese (optional)
Salt and black pepper to taste
Directions:
Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. During the last 2 minutes of cooking, add the broccoli florets. Drain, reserving 1/2 cup of pasta water.
While pasta is cooking, pat shrimp dry with paper towels and season with salt and pepper.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink and opaque. Transfer to a plate.
In the same skillet, add remaining tablespoon of olive oil. Add minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
Add sliced bell peppers and sauté for 2-3 minutes until slightly softened.
Return shrimp to the skillet. Add drained pasta and broccoli, lemon zest, and lemon juice. Toss everything together, adding reserved pasta water as needed to create a light sauce.
Remove from heat and stir in chopped parsley and Parmesan cheese if using. Season with additional salt and pepper to taste.
Serve immediately, garnished with additional parsley and Parmesan if desired.
