Zesty No-Bake Coconut Lime Chia Bars for a Healthy Snack! 😋🍋
Ingredients:
Crust Layer:
1 cup (140g) raw almonds or walnuts
1/2 cup (80g) pitted dates
2 tablespoons shredded coconut
Pinch of salt
Chia Pudding Layer:
1 can (13.5 oz / 400ml) full-fat coconut milk
1/2 cup (90g) chia seeds
1/3 cup (80ml) fresh lime juice
1/4 cup (60ml) maple syrup or agave nectar
Zest of 1 large lime
1 teaspoon vanilla extract
Optional Topping: Whipped coconut cream, toasted coconut, lime zest
Directions:
1. Line an 8x8 inch (20x20 cm) pan with parchment paper, with overhang.
2. Make the crust: Process almonds/walnuts until crumbly. Add dates, coconut, and salt. Process until sticky. Press firmly into the pan base. Freeze.
3. Make the chia pudding: In a bowl, whisk coconut milk, chia seeds, lime juice, sweetener, lime zest, and vanilla until very well combined. Let sit 10 mins, whisk again vigorously.
4. Pour the chia mixture over the chilled crust, spreading evenly.
5. Cover and refrigerate for at least 4-6 hours, or preferably overnight, until the chia pudding layer is completely firm and set.
6. Optional: Spread whipped coconut cream over the set chia layer before slicing.
7. Once firm, use parchment overhang to lift out. Slice into bars or squares.
8. Garnish with optional toasted coconut or lime zest. Store covered in the refrigerator for up to 4-5 days.
