🛒 Ingredients:

2 cod fillets (about 150g each) 🐟

400g baby potatoes, halved 🥔

2 tbsp olive oil

2 cloves garlic, minced 🧄

1 tsp dried thyme

1 tsp dried rosemary 🌿

Salt and freshly ground pepper to taste 🧂

Fresh rosemary or parsley for garnish

👨‍🍳 Instructions:

Preheat the oven to 200°C (400°F). In a baking dish, toss the halved baby potatoes with olive oil, garlic, thyme, rosemary, salt, and pepper. Roast for 15 minutes. Remove from oven, give them a stir, and nestle the cod fillets between the potatoes. Drizzle a little more olive oil on the cod, season with salt and pepper, and top with fresh rosemary sprigs. Return to oven and bake for another 15–18 minutes, until the fish flakes easily and the potatoes are golden. Garnish with fresh herbs and serve warm.

Tip: Add a squeeze of fresh lemon over the fish just before serving for a citrusy finish! 🍋
