Salted Caramel Pretzel Cheesecake Bars
Ingredients:
Crust:
1 ½ cups crushed pretzels
¼ cup brown sugar
½ cup unsalted butter, melted
Cheesecake Layer:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
Salted Caramel Layer:
¾ cup granulated sugar
2 tbsp water
½ cup heavy cream
2 tbsp unsalted butter
½ tsp sea salt
Topping:
Mini pretzels for garnish
Directions:
Preheat oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper.
In a bowl, combine crushed pretzels, brown sugar, and melted butter. Press into the bottom of the pan to form crust. Bake for 10 minutes. Let cool.
In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over the cooled crust and bake for 25-30 minutes. Let cool completely.
In a saucepan, combine sugar and water over medium heat. Cook until it turns a deep amber color. Carefully whisk in cream and butter, then add sea salt. Let cool slightly before pouring over cheesecake layer.
Chill bars for at least 4 hours or overnight. Garnish with pretzels before serving. Cut into squares and enjoy!
