Spring Pasta, Easy and Delicious.
Ingredients:
250g of pasta (your choice)
1 carrot, sliced in half
1/2 red pepper, strips
1/4 cup cherry tomatoes halves
1/2 cup of broccoli in small pieces
2 chopped garlic cloves
1 fistful of chopped parsley
2 tablespoons of the olive oil
Salt and pepper to taste
Grated Parmesan Cheese (Tasty)
Juice of half a lemon or a splash of balsamic vinegar (optional)
Instructions:
1. Cook pasta according to instructions on package. Drain and reserve some boiling water.
2. In a large frying pan, heat the olive oil. Add garlic and cook for 1 minute. Then add the cherry tomato, carrot, pepper and broccoli. Cook everything for about 5-7 minutes, until the vegetables are soft but with texture.
3. Add the cooked pasta to the pan with the vegetables. If it's very dry, add a splash of water from the pasta you reserved.
4. Add salt, pepper, a little parmesan cheese, chopped parsley and if desired, the juice of lemon or vinegar to give it a fresh twist.
5. Serve hot with more cheese on top if you like.
