1 tablespoon Worcestershire sauce

5-6 medium potatoes, peeled and chopped

1/2 cup butter

1/2 cup milk (or more to your desired consistency)

Instructions:
1. Prepare the Pot Roast:

Sear the Roast:

In a large Dutch oven, heat olive oil over medium-high heat.

Season the chuck roast generously with salt and pepper. Sear it for 4-5 minutes on each side until browned.

Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes until fork-tender.

Mash the Potatoes:

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper, mashing until smooth and creamy.

Stir in sour cream for extra creaminess if desired.

3. Thicken the Gravy (Optional):

After removing the roast from the pot, you can thicken the gravy by whisking in flour into the remaining liquid. Let it simmer for 5-10 minutes until it thickens to your liking.
