Ingredients:
10β12 oz ribeye or NY strip steak (1β1.5 inch thick)
Salt and freshly ground black pepper
1 tbsp olive oil
1 tbsp butter
2 cloves garlic (smashed)
Fresh thyme or rosemary (optional)
Instructions:
Pat steak dry. Season generously with salt and coarse black pepper on both sides.
Heat skillet (preferably cast iron) over high heat. Add oil.
Sear steak 3β4 minutes per side for medium-rare (adjust for thickness).
In the last minute, add butter, garlic, and herbs. Baste with the melted butter.
Rest for 5β7 minutes, then slice against the grain.

8β10 large shrimp, peeled & deveined
