Exotic Moroccan-Inspired Lentil Patties: Healthy & Aromatic ✨🧡🌿
ingredients:
1 ½ cups (285g) cooked green or brown lentils, drained well
1 small onion, finely chopped
2 cloves garlic, minced
½ cup (45g) rolled oats or breadcrumbs (use GF if needed)
¼ cup (15g) chopped fresh cilantro or parsley
1 tbsp olive oil (plus more for cooking if pan-frying)
1 tbsp tomato paste
1 tsp ground cumin
1 tsp ground coriander
½ tsp ground turmeric
½ tsp smoked paprika
¼ tsp ground cinnamon
Pinch of cayenne pepper (optional)
Salt and freshly ground black pepper to taste
Zest of ½ lemon (optional)
directions:
1. If pan-frying, prepare a skillet. If baking, preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Heat 1 tbsp olive oil in a small skillet over medium heat. Add the finely chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Let cool slightly.
3. In a large bowl, lightly mash the cooked lentils with a fork or potato masher, leaving some texture.
4. Add the cooked onion-garlic mixture, rolled oats/breadcrumbs, chopped cilantro/parsley, tomato paste, cumin, coriander, turmeric, smoked paprika, cinnamon, cayenne (if using), salt, pepper, and lemon zest (if using) to the mashed lentils.
5. Mix everything together thoroughly until well combined. The mixture should hold together when pressed.
6. Form the mixture into 6-8 patties of equal size.
7. To Bake: Place patties on the prepared baking sheet. Brush tops lightly with oil if desired. Bake for 15 minutes, flip carefully, and bake for another 10-15 minutes until golden brown and firm.
8. To Pan-Fry: Heat a little olive oil in the skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown and heated through.
9. Serve hot in pitas, on buns, or with couscous and salad.
