ingredients:
1 cup (120g) chickpea flour (besan/gram flour)
1 cup (240ml) water or unsweetened plant-based milk
2 tbsp nutritional yeast (optional, for cheesy flavor)
2 tbsp chopped fresh herbs (e.g., chives, parsley, dill, cilantro)
1 tbsp olive oil or melted vegan butter
1 tsp baking powder
½ tsp salt
¼ tsp garlic powder
¼ tsp black pepper
Olive oil or cooking spray for waffle iron
directions:
1. Preheat your waffle iron according to its instructions.
2. In a medium bowl, whisk together the chickpea flour, water/plant milk, nutritional yeast (if using), chopped fresh herbs, olive oil/melted butter, baking powder, salt, garlic powder, and black pepper until smooth. Break up any lumps.
3. Let the batter rest for 5-10 minutes. It should be fairly thick but pourable.
4. Lightly grease the hot waffle iron with oil or cooking spray.
5. Pour the appropriate amount of batter onto the center of the waffle iron (check manufacturer's guide). Spread slightly if needed.
6. Close the lid and cook according to your waffle iron's instructions, usually 5-8 minutes, or until the waffle is golden brown, crispy, and steam stops emerging. Chickpea waffles often take a bit longer than traditional ones.
