Savory Garlic Butter Chicken Bites with Lemon Parmesan Spaghetti Pasta
Ingredients:
8 oz spaghetti
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
Salt and pepper, to taste
½ tsp paprika
½ tsp Italian seasoning
3 tbsp butter, divided
3 cloves garlic, minced
Zest and juice of 1 lemon
Fresh parsley, chopped (for garnish)
For the Lemon Parmesan Sauce:
2 tbsp butter
¾ cup grated Parmesan cheese
½ cup heavy cream
Salt and pepper, to taste
½ tsp garlic powder
Fresh parsley, chopped (for garnish)
Directions:
Cook the spaghetti according to the package directions. Once done, drain and set it aside.
Season the chicken pieces with salt, pepper, paprika, and Italian seasoning. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until golden and fully cooked. Remove the chicken from the skillet and set it aside.
In the same skillet, melt the remaining 1 tablespoon of butter. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the lemon zest and juice to infuse the flavors.
Add the cooked spaghetti to the skillet, tossing it in the lemon garlic butter mixture until it’s well coated.
In a separate pan, melt 2 tablespoons of butter over low heat. Pour in the heavy cream, then stir in the Parmesan cheese, garlic powder, salt, and pepper. Let the sauce simmer for 2-3 minutes, allowing it to thicken.
Pour the creamy sauce over the spaghetti and toss until everything is nicely coated.
Return the cooked chicken to the skillet and give everything a gentle stir to combine.
Serve the dish warm, garnished with fresh parsley and extra Parmesan cheese for added flavor.
