Ingredients:

1 lb chicken skin (reserve from butchering a whole chicken or buy separately)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Vegetable oil, for frying

For the Spicy Vinegar Dip:

1/2 cup white vinegar
1/4 cup soy sauce
2 tablespoons sugar
1 tablespoon chili garlic sauce (or more, to taste)
1 clove garlic, minced
1 small red chili, finely chopped (optional)

Instructions:

1. Prepare the Chicken Skin: Rinse the chicken skin under cold water and pat it dry with paper towels. Cut the skin into roughly 1-inch pieces. In a bowl, toss the chicken skin pieces with salt, pepper, and garlic powder. Make sure the seasoning is evenly distributed.

2. Fry the Chicken Skin: Heat about 1 inch of vegetable oil in a large, heavy-bottomed skillet or pot over medium-high heat. The oil is ready when a small piece of skin sizzles immediately upon contact. Carefully add the chicken skin to the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

3. Cook the Cracklings: Fry the chicken skin for about 5-7 minutes, or until it is golden brown and crispy. Be careful not to burn it. Use a slotted spoon to remove the cracklings from the oil and place them on a plate lined with paper towels to drain excess oil.
