One-Pot Creamy Beef Pasta with Cheese

Ingredients:

1 lb ground beef
12 oz pasta (rotini or penne works well)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 cup beef broth
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh basil or parsley, chopped (for garnish)

Directions:

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat, if necessary.
Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes until softened and fragrant.
Stir in the diced tomatoes (with their juice), beef broth, and heavy cream. Bring to a simmer.
Add the pasta, Italian seasoning, salt, and pepper. Stir to combine and make sure the pasta is submerged in the liquid. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the liquid has reduced to a creamy consistency.
Reduce the heat to low and stir in the shredded mozzarella and grated Parmesan cheese until melted and smooth.
Taste and adjust seasoning with more salt and pepper, if needed.
Garnish with fresh basil or parsley and serve hot.
