HOOKED on Crispy Cod Patties!
Ingredients:
1 lb cod fillet, cooked and flaked
1 egg
1/4 cup mayo or Greek yogurt
1/2 cup breadcrumbs (or almond flour for low carb)
2 tbsp chopped parsley
1 green onion, finely chopped
Zest of 1 lemon
Salt, pepper to taste
Oil for pan-frying
Directions:
In a bowl, combine flaked cod, egg, mayo, breadcrumbs, herbs, lemon zest, and seasoning. Mix gently.
Shape into small patties (about 6).
Heat oil in a skillet over medium heat. Fry patties 3–4 mins per side until crispy and golden.
Serve with tartar sauce or a squeeze of lemon.
