π― Caramel Swirl Cheesecake Bars
Ingredients:
β’ 200g digestive biscuits (or graham crackers), crushed
β’ 100g melted butter
β’ 400g cream cheese (room temperature)
β’ 100g sugar
β’ 2 eggs
β’ 1 tsp vanilla extract
β’ 150ml sour cream or Greek yogurt
β’ 4β5 tbsp caramel sauce (store-bought or homemade)
Instructions:
1 Preheat oven to 170Β°C (340Β°F). Line a square baking tin with parchment paper.
2 Make the base: Mix crushed biscuits and melted butter. Press the mixture firmly into the bottom of the tin. Bake for 8β10 minutes, then let it cool.
3 Make the cheesecake filling:οΏ½In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream/yogurt.
4 Pour the filling over the cooled base and smooth the top.
5 Add caramel swirls: Drizzle caramel sauce over the top and use a toothpick or knife to gently swirl it into the cheesecake mixture.
6 Bake for 30β35 minutes, or until the center is just set.
7 Let it cool completely, then chill in the fridge for at least 3 hours before cutting into bars.
