Flaky Apple Pie Bars

Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 cup unsalted butter, cold and cubed
- 4 medium-sized apples, peeled, cored, and sliced
- 2 tablespoons lemon juice
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1/2 cup apple cider
- 1 teaspoon vanilla extract

Instructions
1- Preheat oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper.
2- In a food processor, pulse together flour and granulated sugar. Add butter and pulse until the mixture resembles coarse crumbs.
3- Press two-thirds of the crumb mixture into the bottom of the prepared pan.
4- Toss sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and salt.
5- Spread the apple mixture over the crust in the pan.
6- In a small saucepan, combine cornstarch and apple cider, cook until thick. Stir in vanilla.
7- Pour over the apple layer. Crumble the remaining flour mixture on top.
8- Bake for 45-50 minutes until golden and bubbly.
9- Allow to cool before slicing into bars.
